I'm looking to add an instagram logo to my footer but not sure the best way to go about this. Should i add a field as link to media or just a key text and add an svg to it?

There are a number of ways that you could do this. The two options you presented could certainly work, but for something like this, I would usually use an Image field. This would allow the content editor to see the image in Prismic, and you would also be able to set size constraints and take advantage of the imgix optimizations.
