We hear about a common error: someone has added copyright text to an image, but the newly added text isn't appearing in their API or on their site. If this has happened to you, here is what you need to do.
Find and edit the document that contains the image in question
Remove the image
Re-add the image
Save & publish the document
Once you've done this, you should see the copyright text appear in the API and on your site.

It doesn't seem like the steps above work anymore with the new page builder.
I'm familiar with the above process for alt & copyright, and they still work for alt text, but ended up having to switch to legacy editor to get the copyright info to appear in the API.
I saw this yesterday and just tested again this morning. I see that you can edit the info and I do see that in the media chooser, but when pulled from the API it still seems to be missing copyright text unless you use the legacy editor.
I have content that requires copyright info displayed along with the pictures / photos and am nearing the point where I hand off to client, so it'd be nice if the new editor was capable of this.
