Schema Item Count Issue on Collection Pages

Hey Legends! Has anyone ever had issues with item count showing up in the search results on collections pages? Or does anyone know if it is possible using this CMS?

I work in SEO for a large e commerce website and I have applied all of the relevant schema to the collection pages & it is currently not showing up in the search results. My old CMS used to show the item count on the pages.

If anyone could help me that would be great! Notice the item count below.

Can you give me more details about how you usually implement this? How are the collections shown on the page? Arey the added manually or queried together in your web apps document?
